Chocolate, Cranberries & Oatmeal

I keep these recipes in my “back pocket” for anytime a quick and easy gift is needed.  With the red from the cranberries, they are festive enough for the holidays but also are much less sweet than most holiday goodies…something most people appreciate this time of year.

Chocolate Cranberry Oat Bars

Mix together:

  • 1/2 cup melted butter or coconut oil
  • 1/2 cup milk, yogurt or kefer
  • 3/4 cup sugar (I use evaporated cane juice)
  • 1 tsp vanilla or cinnamon

Mix in 2 eggs.

Add:

  • 1 1/2 cups flour (I use white whole wheat)
  • 1 tsp baking powder
  • 1/4 tsp salt

Mix well and add 1 1/2 cups oatmeal

Stir in 1 cup mini chocolate chips and 1 cup chopped cranberries (you can used dried, but I prefer fresh/frozen)

Pour into a greased 9×13 pan and bake at 350 degrees for 25-30 minutes.

Here is the same thing, but in muffin form:

Chocolate Cranberry Oat Muffins

Mix together:

  • 1/3 cup melted butter or coconut oil
  • 1/4 cup sugar (I use evaporated cane juice)
  • 1 tsp vanilla or cinnamon

Mix in:

  • 1 egg
  • 1 cup milk or kefer

Add:

  • 1 1/4 cups flour (I use white whole wheat)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Mix well and add:

  • 1 cup oatmeal
  • 1 cup chopped cranberries (I prefer fresh or frozen but you can use dried)
  • 1 cup mini chocolate chips.

Spoon batter into 12 lined muffin cups.  Bake at 400 degrees for 20 minutes.
